Jalapeno Salmon Enchiladas with Verde sauce  

 

1 can chopped green chilis

1 pint sour cream

1 onion, finely chopped

1 or 2 cans 7.75oz Dave’s Jalapeno Salmon (drain extra liquid)

2 cups grated Cheddar cheese, divided

Salt and Pepper to taste

1 dozen corn tortillas

1 can tomato sauce

2 cups green enchilada sauce

Mix in bowl, chilis, onion, sour cream, jalapeno salmon and 1.5 cups cheese, add season to taste.

Fill tortillas with mixture; place in greased baking pan. Mix tomato and enchilada sauce.

Pour over top of enchiladas.

Serve with sour cream
