  • 2-3.25oz cans Dave’s Ahi Tuna in Olive Oil
  • 1/2 cup Mozzarella cheese -finely grated
  • 15 jalapeno peppers -cut lengthwise & remove seeds
  • 2 T whole milk
  • 2 eggs
  • 1/2 cup Corn Meal
  • 1/2 cup Panko bread crumbs
  • salt pepper to taste

Instructions

  • In a medium bowl, mix together ahi tuna, cream cheese, Mozzarella, sharp Cheddar cheese and mayonnaise.
  • Stuff jalapeno halves with the mixture.
  • Whisk together eggs and milk in a small bowl.
  • Mix corn meal, panko bread crumbs, salt & pepper in a separate small bowl.
  • Dip each stuffed jalapeno half into the egg and milk mixture, then roll in corn panko crumbs to coat.
  • Arrange in a single layer on the prepared baking sheet.
  • Bake in the preheated oven 30 minutes, or until filling is bubbly and lightly browned.
